Organic Japanese kombu cooked in low heat in cream, extracting all flavours from the kombu to the cream and churned to butter in small chunks of kombu and mirin.
This flavour is a Japanese/Asian influenced butter which has recently been a global trend as it archives high rates of umami flavour.
